Lemon Cold Storage Method
First of all, the lemon is put in green form and it is requested whether it is yellowing or not. If frying is requested; The winding process is used to ripen most of the fruits such as bananas and lemons with the help of ethylene gas by regulating the temperature, humidity and ethylene concentration in the sealed rooms. Ethylene, which acts as a natural hormone, does not pose any health hazards to the product, and at the same time adds value to the fruit by allowing the product's shell to turn yellow to yellow and preserving the sweetness and aroma of the fruit. Can be stored up to 5 months. If they remain cold under prolonged temperatures at temperatures below 14 ° C, stains form on the skin and the fruit flesh becomes straw. These are cold damage seen in oranges. In addition to this long-term storage of lemons, especially in western countries, short-term storage is also carried out in order to regulate the market. For this purpose, 3/4 ° C temperature and 90% relative humidity are applied in short term storage.
The product is continuously monitored during storage and storage lasts up to 3-4 weeks under these conditions. The lemons taken out of the tank should be offered for consumption immediately. Because the damage to the warehouse usually begins to become apparent after 10 days after the lemons leave the warehouse. In our country conditions, the lemon is stored in natural refrigerated warehouses. Kütdiken, Lamas and Molla Mehmet lemon varieties grown in the Eastern Mediterranean region are kept in the warehouses in the production areas until the beginning of March. The lemons transported to Ürgüp-Ortahisar region with the warming of the weather are stored here between March and August. In summer, in general, the temperatures in the natural-cooled warehouses in the Ürgüp-Göreme region are 10-15 ° C and the humidity rate is 80-90%. In summer, when the relative humidity rises above 95%, ventilation is necessary. In winter the humidity remains the same, while the temperature is 4-7 ° C.
